Suji ka Halwa, a delicious Pakistani semolina dessert
- 1 cup suji (semolina)
- 1/2 cup ghee (clarified butter)
- 1 cup sugar
- 2 cups water
- 1/4 teaspoon cardamom powder
- A handful of chopped nuts (almonds, cashews, and raisins)
- A pinch of saffron strands (optional, for garnish)
INSTRUCTIONS
1. Heat a heavy-bottomed pan or kadai on medium-low heat.
2. Add the ghee to the pan and let it melt.
3. Once the ghee is hot, add the suji (semolina) to it.
4. Stirring continuously, roast the suji in the ghee until it turns a golden brown color and releases a fragrant aroma. This should take about 8-10 minutes on medium-low heat. Be careful not to burn it.
5. In a separate pan, bring 2 cups of water to a boil.
6. Slowly and carefully pour the boiling water into the roasted suji while stirring constantly. Be cautious as it may splutter.
7. Continue to stir the mixture to avoid lumps. Cook for a couple of minutes until it thickens.
8. Add the sugar and cardamom powder to the mixture. Mix well.
9. Keep stirring the halwa as it thickens and the sugar dissolves. It will start to leave the sides of the pan.
10. Add the chopped nuts (almonds, cashews, and raisins) and stir for another couple of minutes until the nuts are well incorporated.
11. Remove the suji ka halwa from the heat.
12. Garnish with saffron strands if desired.
