Quick Kheer Recipe
- Ingredients:
- 1 liter (4 cups) full-fat milk
- 1/2 cup rice (preferably Basmati)
- 1/2 cup sugar (adjust to taste)
- 1/4 teaspoon cardamom powder
- A pinch of saffron strands (optional)
- Chopped nuts (almonds, cashews, and pistachios) for garnish
- Raisins for garnish
- Instructions:
1. Wash and Soak Rice:
Rinse the rice thoroughly and soak it in enough water for about 30 minutes. Drain the water before using.
2. Boil Milk:
In a heavy-bottomed pan, pour the milk and bring it to a boil on medium heat. Stir occasionally to prevent it from sticking to the bottom of the pan.
3. Add Rice:
Once the milk is boiling, add the drained rice to it. Stir well.
4. Cook Rice:
Simmer the milk and rice mixture on low heat, stirring occasionally. Cook until the rice becomes soft and the mixture thickens, which usually takes around 30-40 minutes.
5. Add Sugar:
Add sugar and stir well. Continue to cook for another 10-15 minutes, or until the kheer reaches your desired consistency. Keep in mind that it will thicken further upon cooling.
6. Add Cardamom and Saffron:
Add cardamom powder and saffron strands (if using) to the kheer. Stir to incorporate these flavors.
7. Cool and Garnish:
Remove the kheer from heat and let it cool to room temperature. It will thicken as it cools. You can also chill it in the refrigerator.
8. Garnish and Serve:
Garnish with chopped nuts and raisins. Serve the kheer warm or cold, as per your preference.
