Quick Russian Salad Recipe
- 2 cups boiled potatoes, diced
- 1 cup boiled carrots, diced
- 1/2 cup boiled peas
- 1/2 cup boiled and diced green beans
- 1/2 cup boiled and diced beetroot (optional, for color)
- 1/2 cup boiled and diced apples (optional, for sweetness)
- 1/2 cup mayonnaise
- 1/4 cup sour cream (or Greek yogurt for a lighter version)
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley or dill (optional, for garnish)
INSTRUCTIONS:
1. Prepare all the boiled vegetables and optional ingredients (potatoes, carrots, peas, green beans, beetroot, and apples). Make sure they are cooled down before mixing.
2. In a large mixing bowl, combine the boiled and diced vegetables and optional ingredients.
3. In a separate bowl, mix the mayonnaise and sour cream (or Greek yogurt) until well combined. Adjust the ratio of mayonnaise and sour cream to your taste. You can add more mayonnaise for a creamier salad or more sour cream for a tangier flavor.
4. Pour the mayonnaise and sour cream mixture over the vegetables.
5. Gently fold the dressing into the vegetables until everything is well coated.
6. Season with salt and pepper to taste. Be careful not to over-salt; you can always add more later.
7. If desired, garnish the Russian salad with chopped fresh parsley or dill.
8. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.
9. Serve your quick Russian salad as a side dish or as a light meal. Enjoy!
