Dumba Karahi is a flavorful Pakistani dish made with mutton (dumba) cooked in a karahi (wok-like pan) with aromatic spices.
Here's a simplified recipe to make Dumba Karahi:
- 500g mutton (dumba), bone-in pieces
- 2 tablespoons cooking oil
- 1 onion, thinly sliced
- 2 tomatoes, chopped
- 2 green chilies, slit
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
INSTRUCTIONS:
1. Heat the cooking oil in a karahi or a deep skillet over medium-high heat.
2. Add the cumin seeds and let them sizzle for a few seconds until they release their aroma.
3. Add the thinly sliced onions and sauté them until they turn golden brown.
4. Stir in the ginger-garlic paste and cook for another minute until the raw smell disappears.
5. Add the mutton pieces to the pan and sear them until they turn brown on all sides.
6. Once the mutton has browned, add the chopped tomatoes and cook until they soften and release their juices.
7. Reduce the heat to low, and add the red chili powder, turmeric powder, coriander powder, and salt. Stir well to coat the mutton with the spices.
8. Cover the pan and let the mutton cook on low heat for about 30-40 minutes, or until it becomes tender. Stir occasionally and add a splash of water if needed to prevent sticking.
9. When the mutton is tender and the oil starts to separate from the gravy, add the slit green chilies for extra heat. Cook for another 5 minutes.
10. Garnish the Dumba Karahi with fresh coriander leaves.
11. Serve hot with naan or paratha.
