- 2-3 green cardamom pods
- 1-inch piece of cinnamon stick
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to your spice preference)
- 1/2 cup warm water (for soaking the spices)

INSTRUCTIONS

1. Prepare the Spice Paste:

   - In a small bowl, combine the cloves, green cardamom pods, cinnamon stick, cumin seeds, coriander seeds, turmeric powder, and red chili powder.
   - Add warm water to the spice mixture and let it soak for about 15 minutes. Then, blend the soaked spices into a smooth paste.

2. Marinate the Chicken:

   - In a large mixing bowl, combine the chicken pieces with the spice paste, yogurt, and a pinch of salt. Ensure the chicken is well coated. Let it marinate for at least 30 minutes, or longer if possible.

3. Cook the Korma:

   - In a heavy-bottomed pan or a Dutch oven, heat the oil or ghee over medium heat.
   - Add the sliced onions and sauté until they turn golden brown.
   - Add the minced ginger and garlic, and cook for a few minutes until the raw smell disappears.
   - Add the marinated chicken and cook for 10-15 minutes, stirring occasionally until it's browned.

4. Add Tomatoes and Green Chilies:

   - Add the chopped tomatoes and green chilies to the chicken and continue cooking for another 5-7 minutes until the tomatoes become soft and the oil starts to separate from the masala.

5. Simmer:

   - Reduce the heat to low, cover the pot, and let the chicken cook for about 15-20 minutes. Ensure the chicken is cooked through and tender. You may need to add a little water if the mixture becomes too dry.

6. Final Touch:

   - Check for salt and adjust the seasoning as needed.
   - Garnish with fresh coriander leaves and a sprinkle of garam masala (if desired).

7. Serve:

   - Chicken Qorma is traditionally served with naan, roti, or steamed rice. Enjoy your flavorful homemade Chicken Qorma!

Remember, the cooking time may vary depending on the size and type of chicken pieces, so adjust accordingly. Enjoy your delicious Chicken Qorma!
