Chicken Karahi

Quick Chicken Karahi Recipe

Ingredients:

- 500g boneless chicken, cut into small pieces
- 2 tablespoons cooking oil
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2 green chilies, thinly sliced (adjust to your spice preference)
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh cilantro leaves for garnish
- Lemon wedges for serving

INSTRUCTIONS

1. Heat the cooking oil in a karahi or a large, deep skillet over medium-high heat.

2. Add the cumin seeds and let them splutter for a few seconds.

3. Add the chopped onion and sauté until it becomes translucent, about 2-3 minutes.

4. Stir in the ginger-garlic paste and cook for another 1-2 minutes until the raw smell disappears.

5. Add the chopped tomatoes and green chilies. Cook until the tomatoes become soft and the oil starts to separate from the mixture. This should take about 5-7 minutes.

6. Now, add the chicken pieces and stir well to coat them with the tomato-onion mixture.

7. Add the red chili powder, turmeric powder, coriander powder, and salt. Mix everything together.

8. Cover the karahi/skillet and let the chicken cook on medium heat for 15-20 minutes or until it's tender and fully cooked. Stir occasionally to prevent sticking and burning.

9. Once the chicken is cooked, sprinkle garam masala over it and mix well. Cook for an additional 2-3 minutes to let the flavors meld.

10. Garnish with fresh cilantro leaves and serve hot with lemon wedges.
