Chapli Kebabs

Chapli Kebabs are a flavorful and popular dish in South Asian cuisine, particularly in Pakistan and Afghanistan. They are made from minced meat, usually beef or mutton, mixed with a variety of spices and ingredients.

Here's a simple recipe to make Chapli Kebabs:


Ingredients:

- 500 grams of ground beef or mutton
- 1 medium-sized onion, finely chopped
- 2-3 green chilies, finely chopped (adjust to your spice preference)
- 1/4 cup fresh coriander leaves, chopped
- 1/4 cup fresh mint leaves, chopped
- 2-3 cloves of garlic, minced
- 1-inch piece of ginger, minced
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- Salt to taste
- 1 egg (optional, for binding)
- 2-3 tablespoons cooking oil (for frying)

INSTRUCTIONS


1. In a large mixing bowl, combine the ground meat, finely chopped onion, green chilies, coriander, and mint leaves.

2. Add minced garlic and ginger to the mixture, followed by cumin seeds, coriander powder, red chili powder, turmeric, garam masala, and salt.

3. If you prefer a stronger binding for the kebabs, you can add a beaten egg to the mixture. This is optional but helps hold the kebabs together.

4. Mix all the ingredients thoroughly. You can use your hands to ensure an even distribution of spices and flavors.

5. Once the mixture is well combined, let it rest for about 20-30 minutes. This allows the flavors to meld together.

6. Heat the cooking oil in a large frying pan over medium heat.

7. Take a portion of the meat mixture and shape it into a flat, round patty about 1/2 inch thick. Make sure it holds together well.

8. Carefully place the chapli kebab in the hot oil and repeat with more kebabs, leaving some space in the pan to flip them easily.

9. Fry the kebabs for about 3-4 minutes on each side, or until they turn golden brown and are cooked through.

10. Remove the kebabs from the pan and place them on a plate lined with paper towels to remove any excess oil.

11. Serve the Chapli Kebabs hot with fresh naan, pita bread, or a side of raita and salad.
