Short and Sweet Caramel Popcorn Recipe
Ingredients:
- 12 cups popped popcorn (about 1/2 cup unpopped kernels)
- 1 cup unsalted butter
- 2 cups brown sugar
- 1/2 cup light corn syrup
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
INSTRUCTIONS
1. Preheat your oven to 250°F (120°C). Line a large baking sheet with parchment paper or a silicone baking mat.
2. Place the popped popcorn in a large mixing bowl. Make sure to remove any unpopped kernels.
3. In a saucepan over medium heat, melt the butter. Stir in the brown sugar, corn syrup, and salt. Bring the mixture to a boil, stirring constantly.
4. Once the mixture reaches a boil, stop stirring and let it boil for about 4-5 minutes. The mixture should reach the soft ball stage, which is around 235-240°F (113-115°C).
5. Remove the caramel mixture from the heat and carefully stir in the baking soda and vanilla extract. The mixture will bubble up, so be cautious.
6. Quickly pour the caramel sauce over the popped popcorn. Use a wooden spoon or spatula to gently toss and coat the popcorn evenly with the caramel.
7. Spread the caramel-coated popcorn onto the prepared baking sheet. Bake in the preheated oven for about 45 minutes, stirring every 15 minutes. This will help the caramel coating set.
8. After baking, remove the caramel popcorn from the oven and allow it to cool on the baking sheet. Once it's cool, break it into pieces or clusters.
9. Store the caramel popcorn in an airtight container to keep it fresh. Enjoy your homemade caramel popcorn!
Note: Be careful when working with hot caramel, as it can cause burns. This recipe is relatively simple but requires attention and care when making the caramel sauce.
