Vegetable Omelette Recipe
Ingredients
- 2 large eggs
- 1/4 cup diced bell peppers (any color)
- 1/4 cup diced onions
- 1/4 cup diced tomatoes
- 1/4 cup shredded cheese (optional)
- Salt and pepper to taste
- Cooking oil or butter for frying
INSTRUCTIONS
Prep the Vegetables:
- Wash and dice the bell peppers, onions, and tomatoes.
- If you're using cheese, shred it and set it aside.
Beat the Eggs:
- Crack two large eggs into a bowl.
- Season with a pinch of salt and a dash of pepper.
- Whisk the eggs until the yolks and whites are well combined.
Heat the Pan:
- Place a non-stick skillet or frying pan over medium-high heat.
- Add a small amount of cooking oil or melt a small pat of butter to coat the pan evenly.
Cook the Vegetables:
- Add the diced bell peppers and onions to the heated pan.
- Sauté them for about 2-3 minutes until they begin to soften.
Add the Tomatoes:
- Toss in the diced tomatoes and cook for another 1-2 minutes, just until they start to wilt slightly.
Pour in the Eggs:
- Pour the beaten eggs over the sautéed vegetables in the pan.
Cook the Omelette:
- Let the omelette cook undisturbed for about 2 minutes, allowing the edges to set.
Add Cheese (optional):
- If you're using cheese, sprinkle the shredded cheese evenly over one-half of the omelette.
Fold and Serve:
- Carefully fold the omelette in half to cover the cheese (if added).
- Cook for an additional 1-2 minutes until the eggs are fully set but not overcooked.
Plate and Enjoy:
- Slide the vegetable omelette onto a plate.
- Garnish with a bit of fresh herbs or extra cheese if desired.
