Chicken & Spinach Skillet Pasta Recipe


Ingredients

- 8 ounces of penne pasta

- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

- 2 tablespoons olive oil

- 2 cloves garlic, minced

- 1 teaspoon Italian seasoning

- Salt and pepper to taste

- 1 cup cherry tomatoes, halved

- 4 cups fresh spinach

- 1/2 cup grated Parmesan cheese


INSTRUCTIONS


1. Cook Pasta:

   - Bring a large pot of salted water to a boil.

   - Add the penne pasta and cook according to package instructions until al dente.

   - Drain the pasta and set it aside.


2. Sauté Chicken:

   - While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

   - Add the minced garlic and sauté for about 30 seconds, or until fragrant.

   - Add the chicken pieces to the skillet.

   - Season the chicken with Italian seasoning, salt, and pepper.

   - Cook the chicken, stirring occasionally, until it's no longer pink and has a golden brown exterior, about 5-7 minutes.


3. Combine Ingredients:

   - Once the chicken is cooked, add the halved cherry tomatoes to the skillet.

   - Cook for an additional 2-3 minutes, or until the tomatoes start to soften.


4. Add Spinach and Pasta:

   - Reduce the heat to low.

   - Add the fresh spinach to the skillet.

   - Stir until the spinach wilts and combines with the chicken and tomatoes.


5. Mix in Pasta and Cheese:

   - Add the cooked penne pasta to the skillet.

   - Toss everything together until the pasta is well coated with the chicken, spinach, and tomato mixture.

   - Sprinkle the grated Parmesan cheese over the top.


6. Serve:

   - Allow the cheese to melt slightly, and then remove the skillet from heat.

   - Serve your Chicken & Spinach Skillet Pasta hot, garnished with extra Parmesan cheese if desired.
